Cretan Dakos Salad Recipe

Easy Cretan Dakos Salad Recipe

This salad simply shouts summer. Make it when tomatoes are sweet and ripe and the days are long.

 

Ingredients

250-400g ripe tomatoes, cut into large chunks

2 tablespoons red onions, finely sliced

1/4 cup kalamata olives pitted and roughly chopped

1 tablespoon baby capers

Chopped fresh parsley, dill and/or basil (whatever is fresh and on hand)

1 teaspoon dried oregano

2 tablespoons red wine vinegar

4 tablespoons olive oil, plus extra for drizzling

1/3 teaspoon salt, plus more to taste

Black pepper, to taste

6 Cretan dakos rusks or two thick slices sourdough broken into chunks and toasted

1/2 cup feta or mizithra cheese (if you can get it!) crumbled

 

Method

1. Combine all ingredients.

2. Make a simple dressing using your finest EVOO and the red wine vinegar.

3. Garnish with herbs.

4. Drizzle with plenty more EVOO, serve immediately.
