Skordalia

This simple Greek dip can be made with bread or almonds or a combination of both. Simply adjust the quantities accordingly to total 1 cup.

 

Ingredients

1 cup sliced good quality crusty white bread or whole blanched almonds

2 - 4 garlic cloves

½ cup extra virgin olive oil

¼ cup red wine vinegar

¾ cup water

 

Method

1. Blend all the ingredients in a food processor for 2-3 minute

2. Allow to chill before serving

3. Drizzle generously with your favourite EVOO

Works well as a side dish to grilled fish, chicken or fennel.
